I got a package in the mail today, a very, very special package, sent to me all the way from Scotland. A very lovely, kind, beautiful, thoughtful, wonderful woman named Anne was sweet enough to send me one of the best care packages in the history of, well, history. She sent me a taste of Scotland, a few select treats that I’ve missed so very dearly ever since I left the highlands last November.

    Clearly, it was very sweet of Miss Anne to do such a loving thing for me, and I thought it only fair if I continued the chain of giving by sharing something with all of you. It’s a recipe, a recipe I was able to recreate thanks to the contents of Anne’s care package. This recipe was developed by my friend Alastair & I while we were hanging out in the highlands of Scotland, spending our days trying desperately to come up with new and better ways to make ourselves sick off anything sugary sweet. Well, we finally created something that was pure Scottish sugary perfection, and that’s what I’m going to share with you today. My friends, I give you…

Alastair & Heather’s Millionaire Shortbread Sundae

    Ingredients:

    – One carton of Caramel ice cream, preferably Cadbury’s brand, if you’re lucky enough to find it. It’s in a plastic tub and has caramel swirls on top, as well as cute tiny chocolate chips. It’s worth hunting for, I promise.

    – One square of Millionaire Shortbread per person. If you live in the UK, you’ll know where to find it. If you’re not lucky enough to have easy access to this delightful sweet, you can make some yourself by following this recipe. Trust me, it’s totally worth it. If you do happen to find some readily available in the US, though, please tell me, and I will of course repay you with my undying, endless love. Or if you’re feeling generous and want to send me some from the UK, I’ll of course love you too. 🙂

    Equipment:

    – One microwaveable bowl per person

    – Of course, one spoon per person too

    – One ice cream scoop

    – A Microwave

Step One:

    Make sure that your carton of ice cream is out and at the ready – soft enough to scoop quickly. Go ahead and dig your ice cream scoop into the ice cream and get one scoop started.

Step Two:

    Put one reasonably good sized piece of millionaire shortbread at the bottom of each bowl (at least 2″x2″ squared, if not bigger… preferably bigger). Make sure the piece is right in the middle of the bowl, chocolate side up.

Step Three:

    Put the bowl in the microwave and nuke just long enough so that the caramel layer is starting to ooze out the side, but be sure not to burn the chocolate. In most microwaves, this should be somewhere between 8 to 12 seconds.

Step Four:

    As quickly as possible, take the bowl from the microwave and put a few scoops of caramel ice cream on top of the nice and melty millionaire shortbread. Serve as soon as humanly possible, and remember, dig down through the ice cream to be sure to get each delicious layer of the melty shortbread.

    Now eat, enjoy, and prepare for eternal damnation, because believe me, it’s just that good. But if you’re feeling daring and care to risk things even further, top with caramel sauce or nice gooey fudge, but be careful… this may mean an eternity in hell. It’s THAT good, and it’s THAT evil. If you end up having to play chess against the Devil for your eternal soul, don’t say I didn’t warn you! 🙂

    Anyway, all that said, I now have a happy full tummy of caramel, shortbread, chocolate, and ice cream, and now it’s time for happy Scottish dreams.
